Halloween Crocks

A few weeks ago, I went to a Halloween party. There were 3 beautiful crock pots all with delicious food in them. I'm assuming. I didn't get past the crock with the little smokies in it. I love little smokies more than I love life itself. Also, I didn't get pictures of anyone in their costumes because I was too busy taking pictures of the crock pots. Seriously.

Recipe #1 - Simmered Beef Brisket Stew

2 pounds beef brisket
1 carton beef broth
2T Salt
2T Ground Pepper
3 potatoes (peeled)
4 carrots (peeled)
2 vidalia onions, chopped into rings

I started simmering on low at 10:30pm. By noon the next day, the beef was tender enough that it could be pulled apart by fork. However, the beef seems a little dry. I think next time I'll try more of a sauce -- similar to birria -- that will keep the meat more moist. I would also recommend pulling the meat apart and leaving it in the sauce to simmer for an hour before eating.

The onions are delicious! The potatoes are perfectly cooked and have absorbed a lot of the beef broth and onion flavor.

Another option would be taking some of the remaining sauce and making it into a gravy (add to a saucepan and whip in 2-3T of flour and heat until gravified), which would also help with the moisture of the beef.

Hot Crock

I was talkin' bout crocks last night with my mom and she passed along some of her long-time Crock-Pot knowledge. She recently bought a new pot with the removable liner and LOVES it. Now you can take out the liner and put it in the dishwasher.

But she warns against buying a Crock Pot with the stainless steel sides: she has found that it gets very hot on the outside and can potentially burn your hand.

I wonder where the name Crock Pot comes from. Wikipedia has a nice article about Crock Pots, including a link to over 1000 crock pot recipes!

Slate.com also has an article discussing the history of the crock pot, and ratings of which crock pots are the best.

I guess we're not the only ones talkin' bout crock.

Today at the St. Patrick's Day Parade, Kerry and I were talking about Chili.

What are some of your favorite chili recipes? I like chili when it's poured over tostito chips and then cheese is melted over the top.
